Diego, a Colombian immigrant who bravely ventured to the United States in 1999 in pursuit of new opportunities, has called Boston, Massachusetts home ever since. His journey in the restaurant industry began serendipitously at Bakers Best restaurant in Newton, Massachusetts, marking the start of a path defined by growth and continuous learning.
Since then, Diego has immersed himself in every aspect of the restaurant industry, from working in the kitchen as a dishwasher to participating in high-level decision-making.
With over 30 years of experience, he has honed his craft through collaboration with renowned chefs, observing and analyzing the work of others, and learning from the successes and mistakes of superiors and colleagues—an essential part of his development and relentless pursuit of excellence.
His journey is a testament to resilience, determination, and an unwavering commitment to excellence. Over the years, in the restaurants where he has worked, he has achieved numerous positive outcomes, including recognition from management and awards from some of Boston’s top magazines, newspapers, OpenTable, and food critics.
Through strategic initiatives such as updating tools and equipment, implementing Menu Engineering, conducting in-depth Inventory Management analysis, negotiating with suppliers to reduce costs, and providing comprehensive staff training to improve efficiency in food preparation and portion control, Diego has consistently driven operational excellence.
He has also promoted optimal resource utilization through incentive programs, advocated for essential automation such as robust POS systems and inventory management software to save time and reduce labor costs, and cross-trained employees to perform multiple roles effectively. By embracing lean methodologies focused on maximizing customer value, eliminating inefficiencies, optimizing processes, and reducing costs, he has successfully improved operations.
